- Make the dough: Sift together the flour, granulated sugar and salt into a medium bowl. Work in the butter with your fingers until the mixture becomes coarse and sandy. Add the egg yolk and wine and mix with a wooden spoon to make a smooth dough. Spread a piece of plastic wrap on a flat surface and place the dough in the center. Wrap the plastic loosely around it and press the dough into a disk. Let rest in the fridge while you make the filling.
- Make the filling: Whisk the ricotta in a medium bowl until smooth. Sift in the confectioners¿ sugar, cinnamon and allspice. Whisk to blend.in a separate bowl, beat the heavy cream with a whisk until fairly stuff then gently fold into the ricotta mixture using a rubber spatula. Fold in the mini chocolate chips. Zest the lemon and fold it into the ricotta. Refrigerate for 30 minutes to an hour while you make the shells.
- Make the shells: Fill a large Dutch oven with 2 inches of canola oil; heat to 360 degrees F. meanwhile, sift an even layer of flour onto a flat surface. Dust the dough with flour and roll out slightly. Cut the dough into 4 pieces. Working with 1 piece of dough at a time, roll out until about 1/8 inch thick. With a paring knife, cut out 3- to 4-inch rounds using a small bowl as a guide. You should have about 24 rounds total. Wrap each round of dough around a cannoli mold, brushing with a little beaten egg to seal the seam and ensure the dough won¿t slide off the mild. Flare out the edges of the dough slightly (this lets the oil penetrate each shell as it fries). Working in small batches, hold one end of each mold and carefully add to hot oil. Fry the shells until crispy, 2 to 3 minutes. Remove the shells from the oil using tongs and transfer to a baking sheet lined with paper towels. Let cool slightly. Using a kitchen towel, grip the mold in one hand and hold the shell in the other. Twist the shell slightly to pull it off the mold; set aside to cool. Repeat to make more shells.
- Fill the cannoli: Using a spatula, transfer the refrigerated filling to a pastry bag and snip the corner. Just before serving, pipe the filling into the shells from both sides so it runs through the whole shell. Dust the cannoli with confectioners' sugar.
SESAME CANNOLI WITH GINGER
This is an iconic dessert for me. I love a cup of seriously strong coffee and a cannoli from an Italian bakery on Bleeker Street. Making these at home, I am holding them up to the standard of an Italian bakery. These cannoli come together in two parts: make the shell, thin and crispy, and then make a filling with serious flavor.

- For the shells: Sift the flour, granulated sugar and salt into a medium bowl. Work the butter pieces in with your fingers. Then add the egg yolk. Work in the white wine until a smooth dough forms. Wrap the dough in plastic and let rest for a few minutes while you make the filling.
- For the filling: Sift the powdered sugar, allspice and ginger into a medium bowl. In another medium bowl, whisk the ricotta until smooth and then add it to the dry ingredients; mix to blend. Beat the cream until fairly stiff and gently fold it into the ricotta mixture with a rubber spatula. Stir in the chocolate chips. Lightly zest the lemon and stir it into the ricotta. Refrigerate.
- To roll and fry the shells: Heat the oil to 350 degrees F in a heavy-bottomed medium pot. Meanwhile, spread an even layer of flour on a flat surface and flour a rolling pin. Roll the dough until very thin (about 1/8-inch thick). Cut out 3- to 4-inch rounds, using a glass or a small bowl; you should have about 12 rounds. Wrap each one around a cannoli mold, pressing to enclose. Flare the edges out slightly from the mold. Use a pair of tongs to submerge the shell in the hot oil. Fry until crispy, 2 to 3 minutes. Remove from the oil and immediately slide the shell off the mold. Set aside to cool. Repeat for all the rounds.
- To fill the cannoli: Just before serving, use a pastry bag to pipe the ricotta filling into the cannoli shells. Fill the shells from both sides so that the cream fills the length of the shell. Sprinkle the sesame seeds generously onto the ricotta on each end. Dust with powdered sugar. Serve immediately.
STEAMED FISH WITH GINGER

- Set a large bamboo or metal steamer basket over a skillet of simmering water over medium heat.
- Crush the ginger slices with the flat side of a knife. Place the garlic and half each of the ginger and scallions on a plate that will fit inside the steamer. Score the fish skin a few times with a knife; season with salt and pepper. Place the fish skin-side up on the plate, drizzle with 2 teaspoons sesame oil and sprinkle with the sugar. Put the plate in the steamer. Mix the soy sauce and rice wine and pour over the fish.
- Cover and steam the fish until just cooked through, 6 to 12 minutes, depending on the thickness. Carefully remove the hot plate. Add the snow peas to the steamer, season with salt, cover and cook until bright green, 1 to 2 minutes.
- Transfer the fish to a platter, spoon the juices on top and sprinkle with the remaining scallions. Heat the remaining 2 teaspoons sesame oil and the peanut oil in a skillet over high heat. Add the remaining ginger and cook until it begins to brown. Pour the hot oil over the fish.
