Flavoured with Thai fish sauce, soy, ginger and garlic, this Asian-inspired dish makes a great accompaniment to meat, fish and tofu recipes

750g sweet potato , peeled and cut into 2cm pieces
3 garlic cloves , sliced
thumb-sized piece ginger , peeled and sliced into matchsticks
½ tsp sesame oil
1 tsp Thai fish sauce
1 ½ tbsp reduced-salt soy sauce
1 bunch asparagus , ends trimmed, cut in half
1 tsp sesame seeds

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes in a large roasting tin and toss with the garlic, ginger, sesame oil, fish sauce and 1 tbsp soy sauce. Roast for 20 mins or until golden brown and tender.
  • Add the asparagus, 3 tbsp water and the remaining soy, and roast for 10 mins more. Sprinkle with the sesame seeds, then serve.

3 medium sweet potatoes, cut into 1/2-inch pieces (about 4 cups)
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons celery salt
Pinch crushed red pepper flakes
1 bunch asparagus, cut into 1-inch pieces (about 3 cups)
2 to 4 tablespoons grated Parmesan
1 tablespoon chopped fresh parsley (4 to 5 sprigs)

Steps:

  • 1. Preheat the oven to 400 degrees F. Line a baking sheet with heavy-duty foil.
  • 2. Put the sweet potatoes on the foil, drizzle with half of the oil and sprinkle with half of the celery salt and red pepper flakes. Turn with a spatula to coat. Roast until the potatoes are tender and beginning to shrivel, about 20 minutes.
  • 3. While the potatoes are roasting, toss the asparagus with the remaining oil, celery salt and red pepper flakes in a medium bowl. Using a spatula, add the asparagus pieces to the sweet potato pan and toss to combine. Cook until the asparagus softens and the tips begin to brown, another 10 minutes. Sprinkle the Parmesan over the vegetables and cook until the cheese just melts and coats the vegetables, another 5 minutes. Spread the vegetables on a serving platter and sprinkle with the chopped parsley. Serve warm.

6 small sweet potatoes
1 cup orange juice
1 cup water
1-inch piece of fresh ginger, whacked with the flat side of a knife
1 tablespoon light miso
1 tablespoon low-sodium soy sauce
1 garlic clove, halved
1 tablespoon brown sugar
1 tablespoon sesame seeds

Steps:

  • Preheat the oven to 350°F. Pierce the sweet potatoes with a fork and bake until tender, 30 to 40 minutes. While they're baking, make the sauce. In a saucepan over medium-low heat, combine the orange juice, water, ginger, miso, soy sauce, garlic, and brown sugar. Cook until the sauce reduces and is thick enough to coat the back of a spoon, about 15 minutes. Set aside.
  • When the sweet potatoes are cool enough to touch, slice them in half lengthwise and lay them face up on a sheet pan. Spoon the sauce over the flesh of the potatoes, sprinkle with the sesame seeds, and broil until the sesame seeds are toasted.

2 cups chicken stock or 2 cups broth
1 tablespoon vegetable oil, plus some for drizzling
1 cup white rice
2 inches piece fresh ginger, peeled and grated
4 tablespoons tamari
2 garlic cloves, chopped
1 lemon, juice of
6 scallions, thinly sliced
2 teaspoons toasted sesame oil
4 (6 -7 ounce) sole fillets
2 lbs asparagus, trimmed to 4-5 inch tips
3 tablespoons sesame seeds
salt and pepper

Steps:

  • Preheat oven to 400.
  • Bring the stock and a drizzle of vegetable oil to a boil. Add the rice and stir. Return to a boil, then lower the heat, cover, and simmer for about 18 minutes, until tender.
  • In a shallow baking dish, combine the ginger, tamari, garlic, lemon juice, scallions, 1 teaspoon of the toasted sesame oil, and a drizzle of vegetable oil. Add the sole fillets to the shallow dish and coat in the mixture. Let the fish sit while you prepare the asparagus.
  • Place the asparagus on a rimmed cookie sheet and drizzle with the tablespoon of vegetable oil, the remaining teaspoon of sesame oil, the sesame seeds, salt, and pepper. toss the asparagus around to make sure it is thoroughly coated. Transfer the fish and the asparagus to the oven and roast for 12 to 14 minutes, or until the fish is cooked thorugh and the asparagus is tender.
  • When the rice is tender, fluff it with a fork and remove from heat.
  • Serve the baked sole alongside the roasted asparagus with the white rice.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large baking dish, toss the red potatoes with 1/2 the olive oil, garlic, rosemary, thyme, and 1/2 the kosher salt. Cover with aluminum foil.
  • Bake 20 minutes in the preheated oven. Mix in the asparagus, remaining olive oil, and remaining salt. Cover, and continue cooking 15 minutes, or until the potatoes are tender. Increase oven temperature to 450 degrees F (230 degrees C). Remove foil, and continue cooking 5 to 10 minutes, until potatoes are lightly browned. Season with pepper to serve.

1 pound asparagus spears, ends trimmed
⅓ cup margarine or butter
3 tablespoons sesame seed
1 tablespoon lemon juice, or to taste
1 tablespoon chopped fresh parsley
Salt and pepper to taste

Steps:

  • Place the asparagus in a large pot filled with water 1 inch deep. Bring to a boil, and cook until tender, but still bright green. This will take about 5 minutes, or longer if your asparagus spears are thick. Drain and place on a serving dish.
  • Meanwhile, melt the margarine or butter in a skillet over medium heat. Stir in the sesame seeds, and cook, stirring frequently, until they are golden brown and toasted, about 2 minutes. Stir in the lemon juice and parsley; season to taste with salt and pepper.
  • To serve, pour sauce over the cooked asparagus.
