Grandma's Apples and Rice image

LIKE MOST women of her generation, my husband's grandmother was a "no-measure cook". This recipe of hers suffered as it was handed down, so I made an effort to work out the kinks. Finally, my husband pronounced the results as good as he remembered, and we declared it the "official" recipe. -Joan Kasura, Silver Spring, Maryland

1-1/4 cups uncooked brown rice
4 tablespoons butter, divided
2-1/2 cups chunky applesauce
1 cup diced peeled apples
1/4 cup packed brown sugar
1-3/4 teaspoons ground cinnamon, divided
Dash salt

Steps:

  • Cook rice according to package directions. Stir 2 tablespoons butter into hot rice. Add applesauce, apples, brown sugar, 1-1/2 teaspoons cinnamon and salt. Spoon into a greased deep 2-qt. baking dish. Dot with remaining butter; sprinkle with remaining cinnamon. Bake, uncovered, at 350° for 35 minutes or until heated through. Serve warm or cold.

This delicious side dish is a real change of pace. The rice soaks up the juice from the apples and becomes plump and sweet. Leftovers can be used for breakfast, hot or cold, served with a dollop of yogurt. Recipe from the cookbook Lean and Luscious and Meatless.

2 cups cooked brown rice
3 small sweet apples, peeled and coarsely shredded
1/3 cup apple juice
1 tablespoon brown sugar, firmly packed
2 teaspoons lemon juice
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/16 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F.
  • Lightly oil a 1-1/2 quart casserole or spray with a nonstick cooking spray.
  • In a large bowl, combine all ingredients.
  • Mix well.
  • Spoon into prepared pan.
  • Cover tightly and bake 45 minutes.
  • Serve hot.

I got some apple sausage from Costco a few years ago and was experimenting with ways to use it, and came up with this. Mild Italian sausage works nicely too. It makes a good main dish served with salad and garlic bread, or a side served with chicken.

1 box uncle ben wild rice mix, less seasonings
2 apples, cut in small pieces with skin peeled
3 links mild Italian sausage or 3 links apple sausage, sliced
1/2 cup brown sugar
1 large carrot, grated
1 medium onion, diced
2 tablespoons garlic
cinnamon, to taste
1/2 cup walnuts or 1/2 cup almonds, chopped
butter, to taste

Steps:

  • Start cooking the rice according to box directions, but leave out the seasonings.
  • In a large pan over medium heat, cook the sausage until it's about halfway done.
  • Add the apples, onions, garlic, carrot, and nuts.
  • If the sausage has not released enough grease to coat all the ingredients, add butter.
  • When the sausage is done and the apples and onions are beginning to caramelize, add the brown sugar and sprinkle with cinnamon, reducing heat to low.
  • When the rice is done, add the rice to the pan with the sausage mixture and add enough butter to coat the rice, and additional brown sugar and cinnamon to taste.
  • Cook, stirring occasionally, until all the rice is coated with the butter and sugar and the ingredients are mixed well.
  • It should be a fairly sticky consistency.

1 tablespoon butter
1/4 onion, finely chopped
1/4 Golden Delicious apple, finely chopped
2 cups apple juice
2 cups enriched long-grain instant rice
1/4 cup slivered almonds, toasted

Steps:

  • In a medium saucepan, melt butter and saute onion and apples over medium heat until soft. Add apple juice, increase heat to high, and bring to a boil. Stir in rice. Cover and remove from heat. Let stand for 5 minutes. Remove cover and stir in toasted almonds. Serve.

My husband LOVES rice pudding. I like using my appliances for everything, and have taken to modifying everything I can for the appliances that do all the work. here is a really good one. My DH tends to like alot of texture in his stuff. you can leave out the apples and raisins if you prefer and it turns out just as great. NOTE: when you look in there, it may look like it is over cooking. it is an illusion. Just stir it up.

2 cups apples, peeled, cored, and diced
1 cup short-grain white rice (Carolina Gold is recommended)
3 cups water
1/2 teaspoon salt
1 cup raisins
1 pinch nutmeg
1 (14 ounce) can sweetened condensed milk
4 tablespoons butter
1 1/2 tablespoons vanilla

Steps:

  • Put the rice, salt, 3 cups of boiling water, raisins, apples, and nutmeg. in the rice maker.
  • Tell the rice cooker to 'cook'.
  • When the rice cooker says it is done or switches to 'warm', stir in the condensed milk, vanilla, and butter.
  • Tell the rice cooker to 'cook' again.
  • When it switches to 'warm' again or says it is done cooking, evaluate.
  • If there is too much liquid in your rice pudding for your preference, you can tell the cooker to 'cook' again.
  • garnish with cinnamon.

6 medium apples
1/2 cup cooked brown rice
1 tablespoon thinly sliced green onions
1 tablespoon chopped sweet red pepper
1 tablespoon minced fresh parsley
1 tablespoon finely chopped celery
1 tablespoon chopped carrot
1 tablespoon chopped walnuts
1/2 teaspoon ground cinnamon
2 tablespoons shredded cheddar cheese
1 cup unsweetened apple juice
1 tablespoon chili sauce

Steps:

  • Core apples, leaving bottoms intact. In a medium bowl, combine the brown rice and next 8 ingredients; mix well. Fill each apple with about 2 tablespoons filling, packing it well. Place the stuffed apples in a greased 4-quart slow cooker. Pour in the apple juice and chili sauce. Cover and cook on high until the apples are soft, 1-1/2 to 2 hours. Spoon liquid over each apple serving.

5 cups milk
1 cup long grain rice
3/4 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
8 -10 apples, peeled cored, chopped
1/2 cup sugar
1/2 cup raisins
1 teaspoon cinnamon
3 tablespoons water
1/2 cup fresh soft breadcrumbs
2 tablespoons butter

Steps:

  • PUDDING:.
  • Place milk, rice, sugar and salt in a large saucepan. Bring to a boil, cover and reduce heat. Cook until rice is tender and creamy-about 25-30 minutes.
  • SAUCE:.
  • In another saucepan, combine apples, sugar, raisins, cinnamon and water. Cook covered, over low heat until apples are tender, about 20 minutes. Mash using a potato masher if desired.
  • Spread half the hot rice in a buttered, shallow baking dish. Cover with applesauce, then top with remaining rice. Sprinkle with bread crumbs and dot with butter. Place under a preheated broiler for a few minutes until bread crumbs are golden.
  • Serve warm or cool.
